<p>How pretty are those flowers??  Yellow is one of my favorite colors, and I absolutely love the yellow and pink flowers together.  Makes me happy just looking at them.  My sweet husband bought those for me the other day, and I am once again reminded of what a lucky girl I am.  How many husbands regularly go about surprising their wives with flowers?? </p>
<p>And if you look to the left there, you&#8217;ll see my rosemary making a comeback after the long winter.  My chives are coming back to life too, and I get so excited over every new green sprout I see <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>I&#8217;m excited about sharing this recipe today too because it&#8217;s delicious!  It&#8217;s like those Western breakfast scrambles you can find on restaurant menus except this one is baked in the oven.  Great for a breakfast for dinner night (love those!) or for a special weekend breakfast.</p>

<p>You can also get creative and add other vegetables and ingredients you like.  I love playing around with recipes!</p>
<p>I fried up some sliced apples and pears in a little butter and brown sugar to go along with.  It made for a great breakfast for dinner meal that I will definitely make again!</p>

<p><strong>Denver Potato Bake</strong></p>
<p>Ingredients:</p>
<ul>
<li>6 eggs</li>
<li>1/2 tsp onion powder</li>
<li>1/2 tsp thyme</li>
<li>1/4 tsp salt</li>
<li>1/8 tsp black pepper</li>
<li>3 cups frozen hash brown potatoes</li>
<li>4 oz. (1 cup) shredded Swiss cheese</li>
<li>1/2 cup diced ham</li>
<li>1/2 cup chopped green bell pepper</li>
</ul>
<p>Directions:</p>
<p>Heat oven to 350 degrees.  Grease a 9&#215;9 inch baking dish.</p>
<p>In a mixing bowl, whisk together the eggs, onion powder, thyme, and salt and pepper.  Stir in remaining ingredients.</p>
<p>Pour into the prepared baking dish.  Bake for 40-45 minutes or until set.</p>

<p>I am a HUGE fan of lemon-flavored things, especially breads and desserts.  So it&#8217;s not surprising that I instantly loved this lemon nut bread after the first bite. </p>
<p>It is so moist and delicious, and the lemony glaze on top that soaks into the bread just makes it extra special.</p>
<p>This would be perfect to make on the weekend and enjoy with a cup of coffee or tea.</p>
<p>And non-recipe related, but I just have to say that spring has finally arrived here in Alberta!  The snow has melted away, the grass is green, and the trees are slowly but surely budding and bursting with color.  It&#8217;s about darn time!  I literally feel my spirit lifting as I see more and more of the landscape changing color.</p>
<p>I hope spring has arrived where you are too.  And I hope you give this lemon nut bread a try!</p>

<p><strong>Lemon Nut Bread</strong></p>
<p>Ingredients:</p>
<ul>
<li>2/3 cup sugar</li>
<li>1/2 cup butter, softened</li>
<li>2 eggs</li>
<li>1/4 cup lemon juice</li>
<li>1 Tb grated lemon peel</li>
<li>1 1/2 cups all-purpose flour</li>
<li>1 Tb baking powder</li>
<li>1/8 tsp salt</li>
<li>1/2 cup milk</li>
<li>1 cup chopped pecans</li>
<li>1/2 cup powdered sugar</li>
<li>2 Tb lemon juice</li>
</ul>
<p>Directions:</p>
<p>Heat oven to 350 degrees.</p>
<p>In a large bowl, beat together the butter and sugar until light and fluffy.  Beat in the eggs one at a time. Add lemon juice and peel.</p>
<p>In a separate bowl, stir together flour, baking powder, and salt.  Add to the wet mixture, alternating with the milk.  Stir in the pecans.</p>
<p>Pour into a greased 9&#215;5 loaf pan.  Bake for 50-60 minutes, or until a toothpick inserted comes out clean.</p>
<p>In a small bowl stir together the powdered sugar and 2 Tb lemon juice.  Poke holes in the loaf with a wooden pick (I used a kabob skewer).  Drizzle glaze evenly over the top. </p>
<p>Let stand 10 minutes.  Remove loaf from pan and let cool completely.</p>

			<content:encoded><![CDATA[<p>I have a fantastic dessert recipe to share today!  This is actually the dessert I hinted that I would be making for Easter.  It turned out beautifully, so of course I have to pass on the recipe to all of my dear readers as well.</p>
<p>And as fancy as it looks, it&#8217;s so easy to make!  Even a beginner could whip up this cake and wow everyone <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>To give credit where credit is due, I found this recipe on a wonderful Youtube channel called <a title="Laura in the Kitchen" href="http://www.youtube.com/user/LauraVitalesKitchen">Laura in the Kitchen</a>.  I highly recommend checking her site out, I&#8217;ve made several of her recipes and they&#8217;ve all been delicious!</p>
<p>How good does this cake look??  I love making things with fruit this time of here, and strawberries just epitomize spring to me.</p>

			<content:encoded><![CDATA[<p>Easiest pie crust you will ever make, I guarantee it!  I have been meaning to share this recipe for a long time, and today I&#8217;m finally going to.</p>
<p>This is the pie crust I always use, and it&#8217;s an absolutely no fail recipe.  I readily admit that making a traditional pie crust is an art that I have just never been able to master.  With this pie crust I never have to worry about whether it&#8217;s going to turn out okay, and it takes a lot less time to make.</p>

<p><strong>Press-In-Pan Pie Crust</strong></p>
<p>Ingredients:</p>
<ul>
<li>1 1/2 cups flour</li>
<li>1 tsp salt</li>
<li>1/2 cup vegetable oil</li>
<li>1-2 Tb milk</li>
</ul>
<p>Directions:</p>
<p>Stir together the flour and salt in a mixing bowl.  Add oil and milk, 1 Tb at a time, until the dough comes together into a ball.  Turn out into a pie plate and press into the bottom and sides to form a crust.</p>
<p>Bake at 425 degrees for 10-12 minutes, or until lightly browned. </p>
<p>This crust works equally well with sweet and savory dishes.</p>

<p>Now that our long, harsh winter is finally coming to an end and spring is here (it really really is, I can see green grass in places!) I find myself craving salads more than ever.  I&#8217;ve had enough of rich, heavy foods!  Give me foods that are light and fresh!</p>
<p>I love cooking with different grains, and quinoa is one of my favorites.  I had some red quinoa in my pantry, and I wanted to make a salad with it but couldn&#8217;t really find any recipes that were quite what I had in mind.  So I took some ideas from here and there and came up with my own salad.</p>
<p>And if I may toot my own horn a little bit, I must say this quinoa salad creation of mine turned out delicious!  It&#8217;s also super healthy, quinoa being one of the most nutrient-packed grains out there.</p>
<p>If you&#8217;ve never had quinoa before, now&#8217;s the time to break away from that boring old rice and pasta and try something different!  It may look like there&#8217;s a lot of ingredients, but other than the quinoa, you probably already have most of them on hand.</p>

<p><strong>Quinoa Salad</strong></p>
<p>Ingredients:</p>
<ul>
<li>1 1/2 cups quinoa (red or regular)</li>
<li>1/2 cup dried cranberries</li>
<li>1/2 cup finely diced celery</li>
<li>1/2 cup finely diced English cucumber</li>
<li>1/4 cup sliced green onions</li>
<li>1/4 cup chopped, toasted pecans</li>
<li>1/4 cup fresh parsley</li>
</ul>
<p>Dressing:</p>
<ul>
<li>2 Tb balsamic vinegar</li>
<li>1 Tb olive oil</li>
<li>2 tsp honey</li>
<li>2 tsp Dijon mustard</li>
<li>2 tsp grated orange zest</li>
<li>1/4 tsp salt</li>
<li>1 clove garlic, minced</li>
</ul>
<p>Directions:</p>
<p>In a saucepan, bring 3 cups of water to a boil.  Add the quinoa.  Cover, and cook over low heat for 15-20 minutes, or until all the water has been absorbed.  Set the quinoa aside to cool.</p>
<p>Add the remaining salad ingredients to a large bowl.  Add the cooled quinoa.</p>
<p>In a small bowl, whisk together the dressing ingredients.  Pour over the salad, and stir to make sure everything is coated.</p>
<p>Refrigerate for at least 2 hours before serving.</p>

<p style="text-align:center;">I&#8217;m also super excited about the dessert I&#8217;m going to make, I think it&#8217;s going to be awesome!  If it turns out the way I hope, then you bet I&#8217;m going to post it for y&#8217;all to enjoy too.</p>
<p style="text-align:center;">But let&#8217;s talk about the topic of this post, which is about chopping hard-boiled eggs.  What better time than now to share this tip when I know many of you will be coloring Easter eggs and having lots of hard-boiled eggs leftover. </p>
<p style="text-align:center;">Chopping eggs one by one is time-consuming and tedious, especially if you have a lot.  But if you have a pastry blender, it takes just a few seconds!  Just put all your eggs in a bowl and start chopping with the pastry blender, like so:</p>

<p>I love this method because I like my eggs finely chopped, and the pastry blender does that very quickly.  I don&#8217;t have to go back and forth with my knife, trying to get them as fine as I want.</p>

<p>We had a freak snowstorm last week that dumped tons of heavy, wet snow on us.  But, as of today, it&#8217;s almost all melted away already.  Yes!  *pumps fist in the air*  And an unexpected positve outcome from the snow was that my car, which was in desperate need of a bath, looks much nicer now.  *another fist pump*</p>
<p>I had a hankering for something with blueberries the other day.  Luckily, I had a bag of blueberries in the freezer already.  So I went searching through my cookbooks, sure I could find the perfect recipe to satisfy my blueberry craving. </p>
<p>Enter this delicious bread from Southern Living.  Just the thing I needed!  This is more of a dessert bread, not really something you want to eat every morning for a healthy breakfast (though I&#8217;m all for indulgence once in a while!). </p>
<p>Like most quick breads, this does benefit from sitting for a day before you eat it.  I don&#8217;t know about y&#8217;all, but I can never let a quick bread sit for a day before eating it!  But I really did find with this bread, after eating it straight from the oven and then having a slice the next day, that it is much better the next day.  Still great not matter what, but just that much better if you can wait <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p><strong>Blueberry Tea Bread</strong></p>
<p><strong></strong> </p>
<p>Ingredients:</p>
<ul>
<li>2 Tb cake flour</li>
<li>2 Tb sugar</li>
<li>1 Tb chopped almonds (I left these out)</li>
<li>1/2 tsp cinnamon</li>
<li>1/2 cup butter, divided</li>
<li>1 1/2 cups blueberries</li>
<li>3 cups sifted cake flour, divided</li>
<li>1 1/2 cups sugar</li>
<li>2 tsp baking powder</li>
<li>1/2 tsp salt</li>
<li>1 egg</li>
<li>1 cup milk</li>
<li>1 Tb vanilla</li>
</ul>
<p>Directions:</p>
<p>Combine first 4 ingredients.  Stir in 1 tsp butter until crumbly.  Set aside.</p>
<p>Combine blueberries and 2 Tb flour, tossing to coat.  Set aside.</p>
<p>Stir together remaining flour, sugar, baking powder, and salt in a large bowl.  Cut in remaining butter until mixture is crumbly. </p>
<p>Whisk together egg, milk, and vanilla.  Add to the flour mixture, stirring until all ingredients are moistened.  Fold in blueberries.</p>
<p>Pour into a greased 9&#215;5 inch loaf pan.  Sprinkle the almond mixture over the top.</p>
<p>Bake at 350 degrees for 1 hour 10 minutes, or until a toothpick inserted comes out clean.  Lest rest in the pan for 10 minutes before turning out onto a wire rack to cool.</p>
<p>*All-purpose flour can be substituted for the cake flour.  For each cup of cake flour called for, use one cup of all-purpose minus 2 Tb.</p>

			<content:encoded><![CDATA[<p>After just having gotten over a cold a few weeks ago, I&#8217;m battling another one now!  So frustrating.  My poor red nose can&#8217;t handle being blown anymore! I&#8217;m thinking I should be good for another few years after these back to back colds.</p>
<p>My appetite is sadly lacking again at the moment, but I do want to quickly share a recipe today that I think you&#8217;ll enjoy <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>I love the combination of smoked sausage, beans, and rice together.  Red beans and rice is one of my favorite meals.  This recipe has similar ingredients but with a twist.  It has more of a Southwestern flare.</p>
<p>It&#8217;s easy to make, calls for just a few simple ingredients, and is delicious!  What more could you ask for? <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p><strong>Smoked Sausage with Black Beans</strong></p>
<p>Ingredients:</p>
<ul>
<li>1/2 lb smoked sausage, thinly sliced</li>
<li>1 cup chopped onion</li>
<li>1 clove garlic, minced</li>
<li>1 1/2 cups chopped bell pepper (I used a combo of red and orange)</li>
<li>1 can stewed tomatoes</li>
<li> 1 tsp salt</li>
<li>1/4 tsp oregano</li>
<li>1 can black beans, drained and rinsed</li>
</ul>
<p>Directions:</p>
<p>In a large skillet, cook the sausage until it starts to brown.  Add in the onion, bell pepper, and garlic.  Cook until the vegetables have softened.  Add in all remaining ingredients.  Simmer for about 10-15 minutes, until heated through.  Serve over rice.</p>

			<content:encoded><![CDATA[<p>I have had this recipe saved in my Allrecipes.com recipe box for as long as I can remember, and it finally took the fact that I had two little sweet potatoes that were in dire need of being used up for me to finally make it.</p>
<p>Don&#8217;t make the same mistake I did!!</p>
<p>These are sooo good.  The main flavor really isn&#8217;t even the sweet potato (not that I would have minded since I love sweet potatoes) but the butterscotch flavor from the brown sugar and butter. And the glaze just puts them over the top.  Sinfully sweet!</p>
<p>Jay wrinkled up his nose at the idea of sweet potato brownies.  He has now learned the error of his ways <img src='http://s1.wp.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' />   He thought they were delicious too.</p>

<p><strong>Sweet Potato Brownies</strong></p>
<p>Ingredients:</p>
<ul>
<li>1 cup butter, softened</li>
<li>1 cup brown sugar</li>
<li>1 cup white sugar</li>
<li>4 eggs</li>
<li>2 tsp vanilla</li>
<li>1 1/2 cups flour</li>
<li>1 tsp baking powder</li>
<li>1/2 tsp salt</li>
<li>2 cups peeled and finely shredded sweet potato</li>
<li>1 cup powdered sugar</li>
<li>2 Tb softened butter</li>
<li>2 Tb milk</li>
</ul>
<p>Directions:</p>
<p>Preheat oven to 350 degrees.  Grease a 13&#215;9 baking dish.</p>
<p>In a large bowl, cream together the butter and sugars until smooth.  Beat in the eggs one at a time.  Stir in vanilla.</p>
<p>Combine the flour, baking powder, and salt.  Stir into the batter just until blended.  Fold in the sweet potatoes.  Spread the batter evenly in the baking dish.</p>
<p>Bake for 30 minutes, or until a toothpick inserted comes out clean. </p>
<p>Mix together the powedered sugar, butter, and milk until smooth.  Spread over the brownies while they are still warm.</p>

<p>If you&#8217;ve never tried it before, black-eyed pea salsa may sound a little strange.  It really is delicious!  And this coming from a girl who really doesn&#8217;t care much for black-eyed peas unless they&#8217;re fresh, and this recipe calls for canned.</p>
<p>This recipe comes from Cooking Light, so you know it&#8217;s also healthy, another bonus.  They refer to it as a &#8220;salad&#8221; but since it&#8217;s meant to be eaten with tortilla or pita chips it kinda seems more like a salsa, wouldn&#8217;t you say?  So that&#8217;s what I&#8217;m gonna call it! I also made just a few tiny changes to the original recipe.</p>

<p><strong>Black_Eyed Pea Salsa</strong></p>
<p>Ingredients:</p>
<ul>
<li>1/2 tsp sea salt</li>
<li>1 garlic clove, minced</li>
<li>1/4 cup rice wine vinegar (regular white vinegar works fine too)</li>
<li>2 Tb olive oil</li>
<li>1 tsp cumin</li>
<li>3 cups chopped tomato</li>
<li>1/2 cup finely chopped red onion</li>
<li>2 Tb fresh cilantro</li>
<li>1 (15-ounce) can black-eyed peas, drained and rinsed</li>
<li>1 jalapeno pepper, minced</li>
<li>pita or tortilla chips</li>
</ul>
<p>Directions:</p>
<p>Whisk together the first 5 ingredients (salt thru cumin).  Stir in remaining ingredients.  Serve with pita or tortilla chips.</p>
